Abstract

While there has been reasonable research in the food service sector about menu design from a consumer's perspective, little is known about wine lists in an on-premise environment. A study was conducted among a representative sample of Australian consumers to investigate the elements driving consumers' choices from a wine list using an experimental approach. This way offered the opportunity to understand more about the elements driving consumers' choices when analysed within a wine list framework, and the potential segments of the population behaving similarly. Moreover, we could manipulate the items' organisation on a menu to understand whether this has an impact on consumers' choices. We conclude with managerial implications and outline further research avenues (journal article).
